These zucchini cups have, oh…3 ingredients. Plus salt & pepper.
Plus they’re Portable, Paleo and Parent-approved.
It’s a trifecta of Pleasant Perfection (or healthy Progress).
Zucchini Quiche Cups
- 2 zucchini
- 6 eggs
- 1/4 c. shredded cheese (optional)
- salt & pepper to taste
Preheat oven to 350. Bake for approx 30 min, inserting a knife into the middle to check for doneness.
